| Gouda is good. Nice when melted over some shredded chicken with chipotle mayo on a bun. | |

Hope to eat one of your sandwiches one day. Gouda is a collection term for dozens of cheeses coming from a couple of provinces that have been chosen for export. These cheeses are pretty similar in texture. Best cheese I ever had was when during a school trip we went to visit a monastery that makes its own cheeses (others make beer) - I bought a pound for my parents but was able to only give them 150 grams or so when I got home. | |

Thanks for the idea. I might try doing something like that soon. I generally buy the smoke flavored Gouda and just slice and eat with maybe crackers or bread. | |

I used to eat a lot of smoked herring but I got to a point where my body couldn't handle all the salt any more. I still eat pickled herring. Love it! I can remember back when I was a kid, when the US was still trading with Russia my dad would buy wood buckets of pickled herring. They were really good. But then when the newly established Soviet Union became an enemy of the USA the import of the herring was forbidden. I still have one rolled pickled (marinated) herring in my fridge. Distributed by a Danish company, Richter. | |

| It is our national food. We fish it in the North Sea. Every year there is a contest of the best "Hollandse Nieuwe" ( Dutch New), meaning the first herring catch of the year.
